DESCRIPTION:Once upon a time we used the whole animal – we took nothing for granted. Hooves\, livers\, intestines\, prime cuts\, skin\, tail – The Whole Lot. If we are going to eat meat we need to be grateful for the entire animal and that means we need to know what to do with every bit. That’s why we are so excited to have Peter Wolfe the Free Ranging Chef on board to take you through the Whole Pig. On Tuesday April 9 learn how to break down a carcasse and how to cook and enjoy all parts. You’ll come away knowing how to make sausages\, bacon and find out the secret to good crackle! You’ll learn knife skills\, cooking skills and you’ll gain a new respect for meat and the animals it comes from. Lunch and snacks are of course included! \nYou will work in pairs – and as a pair you will break down an entire carcasse – not watching but doing. At the end of the day that means we will have a lot of meat and you will get to take home samples of your own handiwork – so bring your esky. The pigs you will be processing are free range Kandanga Farm animals that have lived a very full and free life. \nWhere: At The Kandanga Farm Store – 93 Main St Kandanga (2 hours north from Brisbane\, 55 mins Noosa and the Sunshine Coast) \nWhen: Tuesday the 9th April from 8:30 to 5pm. Please arrive at least 15 minutes prior to register and order a coffee. \nThis is a hands on class in a commercial kitchen –  please wear comfortable\, closed toe footwear and bring an apron to protect your clothes. \nAbout your teacher: Peter Wolfe the Free Ranging Chef from Cedar Creek Farm Bushfoods. Peter is best known for his passion for Australian Native Bush foods. He is a chef gone wild – giving up the restaurant world to work with farmers in developing product ranges from their raw produce\, to develop his own range of bush foods inspired condiments and to share his knowledge with foodies wanting to cook something different. Peter loves cooking with ingredients that baffle and intimidate – including offal and those less popular cuts that can pack so much flavor. DESCRIPTION:Each year Kandanga Farm Store runs a “Producer Pot Luck Lunch” designed to help local farmers connect with potential markets and agribusiness facilitators.  This is not a general public event but INVITATION ONLY. Last year over 100 tourism providers\, media\, chefs\, café owners\, agribusiness support industry workers and government attended with a large amount of flow-on benefit received by many of the 50+ producers who took part. \nNow in its fourth year\, the intention of the Pot Luck Lunch has always been to prioritise the customers of Bos Rural adding value and supporting the great work they do in thanks for the support of our store.  \n    This year we will hold the lunch on MONDAY SEPTEMBER 3\, when more produce is available. \nThere is no cost for producers to attend the event\, or for the associated value adds\, other than the contribution of a pot luck dish. If you have not already received your invitation and would like to participate then please email us.   \nOr if you think you can add value to our local farmers through what you do and would like to attend then some tickets will be available for a cost of $30 each. Stuart was raised on the 1500 acre property “Tarwyn Park”\, Bylong\, the celebrated home of Natural Sequence Farming (NSF)\, pioneered by his father Peter Andrews. \nIn this workshop you will: \n         Look at landscape function\n         Talk about how to slow the losses of water and matter off your property\n         How to rehydrate landscapes and how that impacts on your entire farm \nCurrently\, Stuart’s property “Riverside” in Kybong marries NSF with other tried and tested models of regenerative agriculture. This trial is intended to establish a model of land rehabilitation that can be scaled up from very small blocks to large acreages\, while also allowing the farmer to derive an income from the land. This trial builds upon Stuart’s extensive knowledge of environmentally beneficial farming practices\, reflects his commitment to sharing knowledge with others and is guided by models of sustainable agriculture that have been highly successful elsewhere in the world. \n9:30-11:30 Saturday the 16th June. If we are going to eat meat we need to be grateful for the entire animal and that means we need to know what to do with every bit. That’s why we are so excited to have Peter Wolfe the Free Ranging Chef on board to take you through the Whole Sheep. On May 28 learn how to break down a carcasse and how to cook and enjoy all parts. Develop a love for offal! You’ll learn knife skills\, cooking skills and you’ll gain a new respect for meat and the animals it comes from.
