Props will be available but feel free to bring your own. \nTicket includes a morning tea of local produce lovingly prepared by Kandanga Kitchen. \nAbout Sophie Hansen \nSophie moved to Orange\, NSW 12 years ago where she lives and manages a holistic deer farm – Mandagery Creek Venison – with her husband Tim and their two children. She studied print journalism at the University of Canberra and followed a career in feature writing for food and lifestyle magazines both in Australia and Italy. \nWith 20 years’ experience in journalism and food writing\, Sophie is now focused on My Open Kitchen; a podcast and e-course designed to give farmers\, producers and value-adders the inspiration\, skills and confidence they need to use social media to grow their businesses and build supportive communities.  \nShe has authored and photographed a book of recipes and stories\, writes and photographs still for her popular blog of the same name Local is Lovely and has just submitted her second cookbook manuscript to a publisher for release in Autumn 2019.  \nIn 2016\, Sophie was named the Australian Rural Woman of the Year by the Australian Government’s AgriFutures body\, which recognises leadership and a commitment to rural communities. DESCRIPTION:Once upon a time we used the whole animal – we took nothing for granted. Hooves\, livers\, intestines\, prime cuts\, skin\, tail – The Whole Lot. If we are going to eat meat we need to be grateful for the entire animal and that means we need to know what to do with every bit. That’s why we are so excited to have Peter Wolfe the Free Ranging Chef on board to take you through the Whole Sheep. On May 28 learn how to break down a carcasse and how to cook and enjoy all parts. Develop a love for offal! You’ll learn knife skills\, cooking skills and you’ll gain a new respect for meat and the animals it comes from. Lunch and snacks are of course included! \nBonus: If you are interested in raising your own sheep we will give you our top tips for doing so. \nWhere: At The Kandanga Farm Store – 93 Main St Kandanga (2 hours north from Brisbane\, 55 mins Noosa and the Sunshine Coast) \nWhen: Monday the 28th May from 9 to 3pm. Please arrive at least 15 minutes prior to register and order a coffee. \nThis is a hands on class in a commercial kitchen –  please wear comfortable\, closed toe footwear and bring an apron to protect your clothes. \nAbout your teacher: Peter Wolfe the Free Ranging Chef from Cedar Creek Farm Bushfoods. Peter is best known for his passion for Australian Native Bush foods. He is a chef gone wild – giving up the restaurant world to work with farmers in developing product ranges from their raw produce\, to develop his own range of bush foods inspired condiments and to share his knowledge with foodies wanting to try and experiment different flavours. Peter loves cooking with ingredients that baffle and intimidate – including offal and those less popular cuts that can pack so much flavor. We also get told regularly all the reasons why it is impossible in this area to be chemical free. \nSo lets go there\, lets address all these obstacles. Maybe there are some problems that can’t be solved – but unless we try and find solutions things will never change. Just asking the questions can start us on the path to finding the answers. \n\nOrganic products are too expensive\nIf I have a disease or pest outbreak I could lose everything\nLabour is too expensive\nIt just isn’t possible in this area\nOrganic compliance is too time consuming and too expensive\nThe returns are simply not enough to warrant the costs\nMy animals/crops would suffer if I was organic as they would be overrun by pests/weeds/diseases\n\nApril 11 is your chance to come with your questions and ask a panel of experts. \nAttending we have Robert Wallace from Organic Food Chain who can deal with issues of compliance \nJason Vella from Organic Crop Protectants who can cover specific crop health issues \nTim Marshall one of the the Founders of the Organic movement who has visited over 3000 Organic properties and is an author of several resource books. Tim was the first Certification and Standards Manager for the world peak body in organics IFOAM.
